I backsweetened my most recent mead with honey but it is hard to get the honey to mix with the mead. If I just leave the mead alone, I assume the honey will mix with the mead - correct?
How did you decide how much to add? Did you sweeten a smaller sample and figure out how much your whole run would need to sweeten it to the level you like? The honey you add will melt into the mead and then you can swirl it a little to mix it without getting a lot of 02 mixed in.
