Approx 2.5lb fresh picked blackberries, frozen, thawed, mashed and pectined for 1 day
750ml Stolichnaya
V. approx 100g wildflower

I've put it in a jar for a month, strained off the mush, and bottled what was left - only 500ml clear liquor, about same again with light pulp, rest just blackberry debris I've already eaten on ice cream.

My question is the liquor tastes okay, not great, okay - quite viscous, sweet and tannic - and seems to be missing alot of blackberry aroma. Will this improve with age like mead/wine or is it fixed in time? I'm guessing it's about 20% ABV from the stuff going in. If not, it'll get thrown down the hatch in sharp measure!

When making infusions I don't generally use any pecinase. Will cover the fruits with alcohol for 4 to 8 weeks, strain and then add simple sugar (or in your case wildflower honey) and then let stand another 4 or 5 weeks. It may improve some . Worse case scenario - rather than throwing it out - try some mixed with champagne first before dumping it out. Ratio of 1:4 should be about right.

Its alcohol abuse when you dump it out!

I made something similar only I think the blackberries got rum, the raspberries got vodka, and both of them I left the fruit whole and just left them till the fruit lost colour, shaking every week or two as I remembered. Age might help. Mine oxidized a bit and that, in my opinion, made a really nice taste...

I think we may be talking at cross purpose - by 'thrown down the hatch' I mean it'll get drunk! Yes, I've google it a bit since and what I'm getting is it may improve some for a month or 2, but you probably want to drink it within a year. Thanks also Chevette Girl.
