Started 5 gallons of Blueberry wine yesterday ( 11/06/08 )

13 pounds of blueberries
11 pounds of sugar
1tbsp yeast energizer
3/4 tsp pectin
2 tbsp acid blend
5 campden tablets
1 pack of Montrachet yeast

Mix all and add to equal 5 gallons . Let sit overnight with the 5 campden tabs that you crushed and mix well to the must.

OG. 1.126 Brix 29.31-29.40
7.5 grams of Go-Ferm and Yeast.

Pitched @ 9:50pm after mixing for 2 minutes.

Update: Just decided to add an additional packet of yeast ( sprinkled on top ) since my SG was close to 1.130.
I think this should be going better than it is so that is my reasoning, good or bad.

Beautiful color and flavor so far.

11/14/08 Brix 23.75ish. added 1 tsp Fermaid-K .
I think it is moving slowly due to it being around 67-68 degrees in my office here, so I am using a heating pad to get it up to 72 ish.
PH is fine, around 3.6
