I know a Belgian Quintupel doesn't officially exist, but this is what I envision it would be like.

I am going for strong malt backbone perfectly balanced with hops aroma and bitterness. Just enough bitterness to balance the malt and not one iota more. A bit of caramel sweetness with a hint of rye spice with a nice honey nose to pull it all together. Gotta add honey.

My logic for light color is as follows: Enkles are light; Dubbels are dark; Trippels are light; Quads are dark. I imagine a quintupel to be light again.

Bray's Belgian Quintuple
5 gallons - Partial Mash
1.114OG → 1.020FG
12.3%ABV
40 IBU (Balance 0.88)
7.4°L SRM

Specialty Grains
8 oz Crystal 20L
8 oz Rye
4 oz Aromatic
4 oz Special Roast
-Steep at 150 F for 30 minutes; Sparge and discard.

Fermentables
12 pounds Pilsen LME
3 pounds Honey (at flameout)
-Boil for 1 hour with the following hop schedule.

Hops
Sterling hops - 1 ounce at 60 min.
Fuggles hops - 1 ounce at 30 min.
Sterling hops - 1 ounce at 30 min.
Whirlfloc Tablet - 15 minutes
Wort Chiller - 15 minutes
Fuggles hops - 1 ounce at 10 min.
Fuggles hops- 2 ounces at Flameout
Sterling hops - 1 ounce at Flameout

Yeast
Wyeast 1388 - 2 liter starter.
Of course, I have to use my favorite yeast!

Ferment to FG of 1.02.
Use prime dose for carbonation. It will likely be too difficult otherwise.

Ordered the stuff today. Looking forward to creating a new style of beer!

Partially for aging and partially to balance the much increased malt sweetness. I may actually shoot for 50 IBU and dry hop before bottling to get the balance right.

There is a significant chance that the FG will be more like 1.03 depending on the attenuation. Too much hops can age out, but too little is eternally cloying sweet beer.

I don't drink beer that I can read through.

I'll see that sentiment and raise you a 95 degree beach with an 85 degree surf temp. You'll be chugging Corona like it's the nectar of the gods. :)

You do understand that this beer makes a stout look like a woman's drink. Just sayin'.

And it has bee nectar in it making it more so the bees knees than a stout.

Maybe it's time to reconsider ones options.

The last stout I had was 11.5%, the clone is going to be my next brewing expedition.
Wreck Alley by Karl Strauss brewery - delicious.

I would love to try to convert this to a braggot, though. I'll make a post about it.
