Not a pro at anything but I did get to cook some in a big beer kettle for fun. We fermented all caremalized honey from start to finish backsweetening with more caremalized honey. I could see the the possibility of adding some raw honey during the ferment or after to backsweeten to boost some honey flavor complimentating the caremalized honey. WVMJ

Do you find any flavor is gained when you ferment with honey cook down or do you only back sweeten with it?
