Oh yeah, never judge apples early. ESPECIALLY if they're dry. It's really an even more dramatic change than mead or wine I think. (Most of my meads are at least drinkable or I can taste where they're going to go just out of primary. Cider, well, no way. It's icky when just finished.)
 
I tasted this last night. It has gotten loads better. The apple is coming out in it. It is a on the sweet side. Have not taken a gravity reading yet. It has a weird mouthfeel that is hard to describe. Feels smooth like licking polished glass that is liquid. I'll take a gravity later today then forget about it for some months.
 
I finally bottled this. It tasted less weird than it did before. Not better. Not worse, just different. I figured I will let it be in the bottles for some years before I finally decided to crack one open.
