As per post #18 we sampled the next bottle, (slightly ahead of the 3 month mark), and here are our thoughts. The heat is pretty much gone. The tartness is also greatly diminished leaving a nice apple flavor. The caramel smell is still there but not obvious in taste, however, there was another distinct taste that I couldn't immediately place but by the time that we finished the bottle it hit me. It tasted like rock candy, (that I haven't had since I was a kid). Overall it is good, I just hope that the caramel taste comes around. I'll post another review after the 6 month bottle.

Did u peal and core ur apples? The skin is can be bitter i hear?

I've never bothered peeling and coring my apples, have never noticed any bitterness even when I ferment on the skins.

And Vandall, thanks for the review, caramelized sugar or honey is definitely something I want to try.
