My brother in law wants some cherry bounce for Christmas. Normally, good cherry bounce needs 6 months with fresh cherries to be ready. I have a few days.
My hypothesis is that dried cherries could speed the process along. Honey could also add that nice mouthfeel you get from a cordial. So far at three days in, I'm not wrong. This stuff is damn tasty already. I'll give it as long as I can, then I'll filter it just in time for Christmas.
Cherry Bounce - The Mazer's Way
Ingredients
1 1/3 cups fresh tart cherries normally, but I subbed 6 oz Dried Tart Montmorency cherries.
1/3 cup honey
1/2 whole cloves
1 allspice berries
1/4 cinnamon stick
Add 2.5 cups Elijah Craig 12 year bourbon.
Add all to a mason jar and let stand about a week. Filter through a French press followed by a 1.5 micron filter.
