CO-Griz mentioned a cinnamon liqueur that sounded really good, so here is my attempt:

375 ml rum
8 cinnamon sticks
3 star anise pods

I'll dilute it later with sugar water, probably around 100% dilution but ultimately it will be to taste. Updates when they happen. :)
 
Where did you hear of this? Sounds interesting to say the least. I would love to try this if it turns out good. Lots of posts please :)
 
I'm thinking that may be a good basis for a mead too! I would probably have to cut down the ratio a bit, though...

Hmmm...the wheels turn again...
 
CO_Griz just mentioned cinnamon liqueur, and I went with it.

So far the cinnamon has colored the liquid a nice toasty brown, and the aroma is very strongly anise. ;D
 
Did a mini-taste test today: pulled out a tbsp or so of the liquid, mixed with water and sugar (rather unknown amounts, ah well), and gave it a try. Quite good, once it was diluted and sugary enough. By itself it is quite strong and has quite a bite. The sugar really brought out the anise flavors, and the dilution with water decreased the strong alcohol presence.

We think it's probably at a good point, extraction-wise, so I will soon strain the whole batch and dilute with sugar water. Maybe tomorrow, maybe the next day.
 
Today's events:
Made some 1:1 simple syrup with 1 cup water and 1 cup table sugar.
Briefly boiled and cooled the syrup.
Strained out the sticks and stars from the rum.
Combined the sugar syrup into the rum a few spoonfuls at a time, periodically tasting.

I wound up with 600ml of liqueur. It's only 9am here so my alcohol tasting capabilities are not really at their peak, but I think the sugar level is about right. I might decide to water it down some more with a dilute sugar solution (3:1 or so), but for now it is back in its jar in the closet. I'll give it another week to meld and see how it is going.
 
I tasted this again and liked the sweetness level where it is. So I bottled it today. Perhaps I will try some tonight!
