My first two meads have been in the carboy since August 2014. I am planning to back sweeten both of them but they taste a little sweet to me already. I don't want to overdo it and have a very sweet mead 2 years from now. Does the sweetness tend to increase or decrease with age in mead?
Both of these are 3 gallon batches and I had planned to add about 2 lbs of honey to each to sweeten and then let it age some more before bottling, I am thinking now 1 lb for the 3 gallons may be enough. I need to do so bench testing but that will not tell me what affect age will have on it.
