Maple mead does not necessarily mean mead + maple syrup. One could simply go with maple honey :)

When it comes to oxidation of honey I wouldn't bother much (still didn't find a paper exactly on this topic and further investigation is needed), but if it's not dry, the activity of glucose oxidase (which is contained in honey and is activated by dillution) will break glucose into gluconic acid and peroxide. Concentration of dissolved oxygen and peroxide are linear - even if you block external O2 intake, there's one produced by honey itself.
