Easy Tofu Spinich Stir Fry
1 pound extra-firm tofu
1 teaspoon butter or margerine
1 medium bunch fresh spinich (1/2 can, drained, if using canned spinich; or, say, 1/2 small bag of the frozen stuff if that's what's on hand)
1 small onion, minced (or 2 teaspoons, dry)
1 Tablespoon soy sauce (approx.)
1/4 to 1/3 cup mead
Brown the tofu in the fry pan or wok with the butter over MEDIUM heat. Add soy sauce and stir. Add spinich, onion, and mead, turn up to HIGH to boil off excess water/liquid. Turn down when it starts to dry. Stir fry is done when the spinich is.
Serve over rice, with mead to drink on the side. Pie or sherbet for desert works nicely.
Feeds 3 to 4, depending upon girth.
