few question about racking and secondary fermentation!

Hi guys!

Mead lover located in China,just started my first batch of mead three weeks ago.

It's been fermented nicely so far so I decide to rack it for the first time,and I'm really excited about it.

I expect to get a 1.084 SG and 11.24% ABV mead acording to the calculator and backsweeten it after racking.Also,I want to put some cherries in it at the same time.

my questions are:

1.Is it safe to put cherries in it after first fermentation?Any chance get the mead infected by bacterial?If not,how can I sanitize my cherries?(I don't want to boil them but it seems to me that heat is the only way to kill most bacterial)

2.Will the secondary fermentation going without any yeast energizer or nutrition?

3.Can I backsweeten mead with some caramelized honey?I really enjoy some smokey flaver in my mead.
