Progress report!
Checked the SG and did a taste test today, 5 weeks in. SG was 0.96-0.97. Still have some activity, getting a bubble through the airlock about once every 3-4 minutes. Tried a small sample, very nice. Quite dry, which is what I'm looking for. Probably rack it in a couple of days and bottle in 2-3 weeks. Very happy so far. :)
 
Will the addition of SO2 interfere with carbonation in the bottle? I.e., will they kill the yeast?
 
I’ll just throw in my way of carbonation method. Haven’t read all posts, but I sometimes carbonate in kegs with adding honey solution (pasteurized). And to have as clear mead as possible I use draught clear beer, it is an float to which always take the mead/beer from the surface in the keg. This way you always get rid of the lees when bottle. If it isn’t clear enough I add kiselsol from the gas input on my keg. This way it will be crystal clear and naturally carbonated.

Forgot to mention that backsweetening can be performed also, by adding honey diluted with water and sulphites. This sometimes require keg to keg transfer to get rid of the lees. So that sulphites doesn’t binds up into the bottom layer in the keg.
