What yeast will you be using for your export ale? I hope you have a starter going if you are using a beer yeast. If the dry wine yeasts you should be OK...
The LHBS did the crush, I did a batch sparge kinda. At the end of the mash I drained the cooler (after recirculating), then added the remaining amount of water that I wanted to collect and mixed it up real well then recirculated again and drained again. I didn't test the ph.
The thermometer read 145 when I mahed in, then 30 minutes through I pulled about half a gallon out and brought to a boil and addded it back in, that brought it up to right around 160 but i stirred vigorously and it came down to 157 within two minutes with the lid open so i closed it up and left it there for another 30 minutes. I didnt plan it this way, I meant to have a single infusion. I mashed in at to low of a temp I think.... I had two friends over and I was rambling to much an not paying attention. I think i mus thave mashed in at 158 instead of 168 as planned. Now I'll know that I will lose 13 degrees instead of 15 though.
I'm going to mix up my starter now and I'm going to start brewing in like an hour, but I'm using dry safale us-05 and im using two 11g packs so it should be fine right?
Ok, so far so good. I mashed in with 28 quarts water to 19.25 #'s grain, ratio of 1.45. I mashed in (doughed in?) at 166, mixed it all around and closed it up for ten minutes. When I came back it was at 152ish!!!! Success!!!!
The Cream Ale is an excellent one to use with honey, in my opinion, since it is not too strong in any flavor. I have made both All-Grain and partial ( I think I posted the recipe in the Beer section; perhaps just the partial) and they both came out great. I put the recipe together based on a lot of input from my local Brewpub, the Milwaukee Ale House. The orange blossom really shows through nicely, with the citrusy Liberty complementing it perfectly. Good luck on the all-grain one you are making now.
Oh, and 1 packet of the Safale works fine for me. Those are amazing yeasts and I have never had one not ferment like crazy.

well things went almost exactly as planned. I was trying to move my fish tank and brew at the same time and that was a mistake. When I got back it was boiled down to what I thought was much less than 5 gallons, so I added about 2 gallons of water to the fermentor and siphoned in the wort which turned out to total 6 gallons. Now my beer is at 8% instead of the planned 11... No big deal I suppose. I'm getting a real mash paddle and marking it with volume lines that will match up to my boil kettle so I can better figure where I'm at next time. Ill keg this one and drink it sooner than planned to make space for the next one......
I finally got the tap working correctly. Now I just have to work on force carbonating stuff the rigth way.... The cream ale is pretty good. I think its a little like BMC but with a little more flavor. Its deffinately a a good beer but I like someting with more body and a little roast to it better. I think I'll continue to make it though so I can convince other people to drink "home brew".
