Tried the California Orange Blossom mead which was produced using méthode Champenoise. Nice floral aroma and flavor. Dry, but not too much so with a definite carbonic acid bite which was not unexpected and in character. No real foaming or head on pour, but good initial effervescence with pinpoint bubbles which seemed to dissipate moderately quickly.

His Avocado sparkling is pretty good too. He has his own little niche and built in market and keeps pretty much to himself. I know his honey supplier and speak with them when I want their Avocado Blossom honey.

I still had a bit left over in the bottle today that had gone nearly flat. I actually like it a bit better pétillant or even still. Food pairing note: the Heidrun website mentions serving it with "spicey [sic] Thai and Indian cuisine", so I tried it with some day-old elk chili. (Texas curry? ;D) Surprisingly tasty complement.

I also got a bottle of the Montana Clover Blossom, which they describe as their "lightest varietal, and dry! Great bubbles and subtle honey essence." I'll post comments after I open it up in the next few weeks.
 
I too have spent a bit of time talking with him. It doesn't give out much. BUT is very nice guy to talk to. I think he has the most top notch meadery web page
Not a fan of the bubble mead either. Like to open them and let them go flat first.:)
 
I have two bottles of his mead in my refrigerator right now, and this interested me.

I'll report later when I open the bottles, assuming my son doesn't take them to Norway with him.>:(
