Well, I had this one at the Linkery in San Diego recently. I was so amazed and delighted to see mead at a restaurant that I skipped some great Belgian ales they had for this! According to the bartender who went with his crew up to the Heidrun Meadery, this was produced with the method champenoise so it was quite carbonated and left a nice foamy head on top. Despite this method, it retained just enough sweetness to complement the extreme carbonation. It was very light in color (lighter than champagne) and was very aromatic. I was quite impressed. My companions were big fans as well. Again according to the bartender, the other two types they have from this meadery, orange blossom and wildflower, are bottle conditioned and so have more of an ale character to them, but I haven't tried them yet. i have tried this mead as well it is MY FAVORITE sparkling mead !!! the head on the mead is foamy like a beer and it keeps its head through out the whole glass. ive tried the orange blossum and the avacado(from heidrun) and in my opion they are not as good they did get better after a year of aging. but the starthistle was very good both times ive purchased it. lets put it this way the last time i bought a case and have been slowly enjoying the last 6 bottles over the last year.
