I have been searching through the forums for a few days trying to determine how much potassium metabisulphite to add to a mead before bottling for stabilization. From my reading I have found that a sulfite titration test is not recommended, and that pH plays a big factor in determining additons.
From what I can gather from additional research is that to attain 0.8ppm of molecular SO2 I will need to add potassium metabisulphite in ppm based on pH as follows: pH 3.0 (14ppm), pH 3.1 (18ppm), pH 3.2 (22ppm), pH 3.3 (28ppm), pH 3.4 (35ppm), pH 3.5 (44ppm), pH 3.6 (55ppm), pH 3.7 (69ppm), pH 3.8 (87ppm), and pH 3.9 (109ppm).
Is this even close?
