While perusing the web for mead/mead recipes, I came across a winery called Hidden Legend Winery. They sell several meads and one of them is called the dark honey mead. The description of it describes the process to make it a little and it seemed pretty unconventional but interesting. They caramelized the honey a little bit before fermentation. From what the rest of the description says, it seems to add some body to the mead and give it a very different flavor. Has anyone on here done that? I'd really like to know if it would be worth me trying to make
 
Many of us have done it, and WVMJack even wrote an article in Bee Culture magazine about it. Use the search tool for bochet, Carmalized honey etc

Is it really good? Or should I do a blackberry melomel next? And has anyone ever tried that winery's mead? I'd like to know if it's exceptionally good mead or not

I'm looking into making a bochet as well, the idea of a caramelized honey mead makes my mouth water

Their meads are hit and miss in my opinion. I seem to recall the one you're speaking of being one of the hits. It has been awhile though... that's what I get for not taking notes.

Honey extraction plants have to heat honey and wax cappings to separate the wax out. Cappings wax is valuable stuff but here, the honey is tipped down the drain. You might be able to get the honey cheap if you've got access to an extraction plant.
