So really not sure what I am doing, but I did it. Wife bought me a wine kit

15lbs wild flower honey(because I was desperate)
5 oranges
4 sticks of Cinnamon
2 packets Lalvin...and numbers
5 teaspoons Nutrient
5 gallons spring water

I mixed the honey and Cinnamon with a gallon of water and threw some heat to it. Mixed it with he rest of the water and oranges. Yeast and Nutrient and put it in a closet. Its been a day and half and I got bubbles through the airlocker

I also have a funny looking thing I thought was a anal thermometer, well its not I tested it

yes I sanitized everything, might sanitize the meter thing again though

Question...will this blow up?
 
Also after reading some other posts, I am leaving for two weeks for work. I thought letting it sit for two weeks was good. Now I am not so sure, ideas?

Also it was a hydrometer not a thermometer
 
Lalvin 71b-1122. I had to dig through the trash.......not really i wrote everything down. I actually did some research and pulled this recipe from here and one other sight. I just never read anyone complaining about over flow or little explosions until after signed up here.

Will you do any nutrient feding before you go? You should feed it some and aerate it. Unless you very little head space you should't have problems with overflow after the first aggresive serge.L
 
Just make sure you lock the closet you leave it in or it will roam the earth solving crimes like William Shatner's toupee. Also be prepared to find it almost finished. Your anal thermometer contraption will let you know when it reads 1.000 or less. Considering the yeast you are using, it should go dry. In which case it will taste like anus as well. Once you are done fermenting, you should rack it into a clean glass jug (or if you only have one, transfer to a glass holding vessel and back), add water to reduce headspace (you want as close to the narrow neck as possible) and put the cleaned and sanitized airlock back on. Forget about it for three months.

There are other things you can do to top up, but since this is your first mead, you won't have more mead to top up with and a little water isn't going to make a huge difference. This mead you made will not taste good until January 2016. By then however, you will have read about and made a proper JAOM, then a BOMM and you will most likely be using this batch to top those up!
 
Well that sucks!
I have some energizer I was going to use once I knew what I would use it for.

Any way is there anyway to sweeten it up and what was my big mistake?

Also my dog has that closet on lock down, he hears the bubbles in the air locker and it blows his mind
 
You haven't made any mistakes! Just that dry mead with wine yeast never ( hardly ever) tastes good right away. Bonus is after a year or two it's awesome.

All you did "wrong" was make a mead that takes a long time to taste good. It's more advanced I guess you could say.

You want your first mead to be a "quick" mead like JAOM or BOMM. That way you get to drink faster!

Good news however is that you can read the newbie guide, Joe's Ancient Orange Mead recipe and the BOMM protocol. You now have a perfect excuse to MAKE MORE MEAD.

So I guess my current plan will be, Rack this in my glass Carboy when I get home next, plan for it to sit in it for a few months. Start another batch using JOAM, or BOMM recipe from here...........

I am going to need to buy another Glass Carboy!

Also maybe throw in a few teaspoons of energizer before I head out??

I am reading conflicting things about stirring/tossing the must. I have a big ass spoon or a drill powered "degasser", if I put that energizer in before I leave spoon or Drill?

I am hoping for the drill it sounds fun

Exactly. I suggest JAOM. Nothing fancy pants needed. Just common stuff all found at your local grocery store. Tastes pretty good too. Ready in 90 to 100 days and keeps getting better the longer you can wait ( I never can. I've heard this is true). Then once you are ready to get some specialized equipment, you can make BOMM. It's easy as pie, but you need specialized yeast and nutrients n stuff. The payoff for the extra expense is mead that's ready in as little as 30 days. Although 40 to 50 is more like it, the flavor is nice in just 30.

Yeah I finally got it translated a little bit, it seems high maintenance?

My job kind of ruins that for me, I work 2 weeks on 1 week off, so if I have to monitor it a lot makes it hard.

Not at all. The BOMM needs about one week of attention. The first week. After that, you can let it do its thing.

Thanks for the tips and ideas
This morning before I left I added some nutrient, brought in the drill and went to town.
Put the lid back on and closed the door, then bolted it, then put a chair in front of it. Then put the dog on watch, don't want to be responsible for the apocalypse.

Yes I sanitized everything, except the drill, thought about it but you know water and electricity.

Be back in two, to rack it and make BOMM

Also if you feel like tossing me a reccomended BOMM recipe in the coming weeks that would be super duper, sweet if possible to justify this to my wife, and get her drunk
