So i made my mrad following joes recipe buuut i used champayne yeast red star in the yellow paccket and fermentation stopped gravity was at .999 so its super dry but upon tasting its got a very strong almost harsh bite to it and if u drink it a lil its almost got a thickness to it and a strange aftet taste i think from leaving it on the lees to lobg maybe is there a way to fix it?

Is this the mead that you made on April 1st, with Red Star Champagne Yeats and DAP?

If so, that's not a JAOM! A JAOM uses bread yeast and doesn't use any nutrients, except for what might be in the fruit. A JAOM ONLY (!!!) works if you follow the directions exactly. It's supposed to end up sweet, to balance out the bitterness of the pith (orange peel). The champagne yeast has fermented all of the honey, so what you ended up with is WAY out of balance.

One month seems kind of a short time for a JAOM. Has the fruit dropped and has it cleared? You could be tasting the yeast that's still suspended, the pith, high alcohol and/or fusels. As, it's been only a month, I seriously doubt your problem was caused by leaving it on the lees.

You need to wait until it clears, rack into another jug, let it clear some more, rack (again) onto some stabilizers (potassium Metabisulfite and potassium sorbate), sweeten with some honey (SG = 1.025???) and then let it ago for a couple of months (a year?). And, even then, you may not like what you end up with.

Or, if you don't want to wait, throw it out :-)
 
It's probably going to be even harder when you start making real mead as there are several things you need to do correct for it to come out as good as it could. The first half of mead making is chemistry. The other half is like being a chief. The first half needs to be done according to the science. The last half is a craft/skill but doesn't necessarily have any rules that require adherence.

I tryed it after a far amount of settling and its if i had to try and describe its like an orange flavored water and its at .999 so ima try to add some honey and oranges with out the pith and just hope for the best

On another note its not dangerous to drink mead early or while fermenting cuz on my other meads after i measure there gravity i try just a small sip to see how its progressing xD

It's not dangerous at all. I try my meads often while they are fermenting.

And I second what Chevette Girl says. Try another JAOM the right way and you will be very happy. Put an airlock on the first try and leave it be for like, 5 years. LOL No... really like 5 years.
 
The first ones been stablized already no bomb supprises 4 me ill let it age 4 ever tho
