I think I used too much honey!

First off I want to say hello to everyone on this very informative site!

I am a newbee to mead making but am having fun learning. This is my 2nd batch (my first is rubbing alcohol I think) of mead and I wanted it to be sweet. Well I used different types of honey I had around the house and some I purchased. It was in grams and kilos and after I finished I found I had added about 5.0lbs to a gallon batch. The first 2 1/2 weeks it bubbled just fine and now it is around 5 or 6 bubbles a minute with some yeast at the bottom from what I can see. I started it on 01 March 2018 Here is my rough recipe that I used;

5.0lbs honey
Spring water mixed with honey after warming just a bit (not too hot) Shook for a while to add air to the must
D47 yeast 5 grams
1 Tsp Yeast food
1 Tsp Yeast Energizer.
Starting Gravity was 1.160 which later I found out to be pretty high.

A week and a half later I added some more yeast food/nutrient and it started to bubble pretty seriously for awhile.

Well today 23 March I decided to take another reading after sanitizing the gravity tester(?) From what I was seeing the gravity is now only 1.150. I took a little sample and it tasted pretty good but very sweet. My question is, should I let it continue to bubble until it is done before racking? Also since some yeast is falling to the bottom does this mean the alcohol has increased enough to start killing it? And last question, have I possibly made a honey liquor?
