Hello!
I am new here. Just signed up earlier today & spent some time reading a few posts and comments. Tomorrow I will be starting Joe’s Ancient Orange, Clove, and Cinnamon Mead recipe. After a quick trip to the store of course...
I am new to this. Never made alcoholic beverages before. Don't have the equipment either. Nope, can't do readings. Wouldn't know how to use that thingymabob anyway. lol But, I did find a recipe (probably a spin off of Joe's) where you used the gallon jug that the water came in. So I will be using that process but following Joe's instructions (no racking!) with the balloon method too. Later on, if it turns out as good as the reviews, then I will put it in a glass container on the counter (beverage dispenser) for a small nightly cup/glass.
My question is this:
Is it alright to use 2 pounds of honey instead 3? I have 1 pound & 8 ounces left in the jar. This is for tea, sandwiches, bread recipes, etc. So, tomorrow I will be buying 2 pounds for the mead experiment. I will dip into the other honey if needed.

Guess I am in the wrong group since I don't have a glass carboy or water airlock.

I will be looking for another mead group. Thank you.
