Ok I am in the prosess on making my second mead with lalvin 71b 1122 yeast.
I used 8 liters (around 2 gallons)of Spring water and 4 kilo honey and 13teaspoons of bee pollen. it has bee in primery for 25 days and it has slowed down to 1 bubble every 5 minutes 40 seconds for the first 10 days or so it was bubbling once every 2seconds the yeast cake is about an inch and a half thick. I am still waiting for my hydrometer to come though the post and I don't know If I should wait for the hydrometer to arrive It could take another 5 days or so, or should I rack of the lees? I am worried as I have read that it Is not good to leave 71b1122 on the lees to long?
