We're starting small right now and both of us are keeping our day jobs. Hopefully someday this will be our day jobs! (Dreaming, right??)

Probably doing 800-1000 gallons a year to start. We have a few 60 gallon fermenters, and I will be getting some 80 gallon Flextanks in addition to two 60 gallon oak barrels from a (local!!!) cooperage company. I have been slowly buying equipment so the initial outlay of cash isnt as rough as buying everything at once. Its been 9 months in the permits stage, so it does feel good to get past that!

mfalenski, that is great! My wife & I share that goal as well. We'd love to one day (possibly close to retirement age) open our of meadery/winery.

We'd love to visit once you setup shop, keep us posted :)

I dislike using the term basement as it makes it seem less professional. But yes, it’s in my basement! That was step one – we needed a totally separate space if we wanted to keep expenses down so we built a few walls, added a door, and did some new electrical and plumbing and viola, a Meadery! The drawback to this is that
our zoning won’t allow for a tasting room unless we make a number of modifications inside and outside. So in a few months we’ll probably look at a location for sales
& tasting.

Anything under (I believe) 200,000 gallons is considered a Limited Winery in PA, that’s what we fall under. The paperwork for both the TTB and PLCB (Pennsylvania Liquor Control Board) were manageable, painful but manageable. The bond company was a different matter. The TTB is very particular for
what information they want and don’t want, and apparently TTB bonds aren’t a specialty of bond companies! The third try was a charm and the TTB accepted it.
(I believe Ian had a lot of fun with his bond company as well.)

I’m still tying up some ends, but hopefully will start production by the end of March!
