I made some Limoncello based of a recipe here last year or so. It was very nice, though my wife killed it off a little quicker than I had hoped. Time to make more!

This time I'm trying a predominantly rum base, since I like rum more than vodka. We'll see how it goes.

--zest of 29 Meyer lemons, in various states of ripeness (combo of this year's and last year's lemons), fresh from the tree
--most of a bottle of rum (two-ish cups short of a quart)
--topped off with vodka

The hand cramps from zesting are gone now. They need to make a zesting machine. The lemons are "organic" and "dry farmed", aka from a backyard tree of a friend. All were scrubbed clean before zesting. I used a microplane, so the zest is all composed of tiny bits instead of large curls. I'll check on it in a month or so.

Also collected nearly a liter of lemon juice for lemonade. Happy day!
 
I finally got around to finishing this liqueur. Strained out the zest and collected 750 ml of liquid. Diluted to 6 pints using a syrup of 2 cups water + 1.5 cups sugar. I'll update when it gets officially tasted.
 
I haven't tried it yet but my wife had a small sip the other day. She said she liked the vodka version better--it was more lemony. Dunno why that would be, but there you go. I will try to have occasion to sample this one soon.
 
I do a variation on this with Gin. I don't zest the lemons with a grater though. I use a peeler and a small knife to slice off the bitter white stuff. That done I try to squeeze the peel into the bottle without breaking it up. (Of course after The self-sacrificial act of drinking one or to shots of gin to avoid spillage :rolleyes:) Then I top off with unrefined cane sugar.

The juniperberry makes for a very delicate and aromatic beverage.
 
It might be worth trying orange rather than lemon.

I've heard of spiced rum recipies that included orange zest, along with cinnamon, clove, all spice, ginger, etc

Google might help with this.
