making a dry mead to blend with desert mead

3 gallons total

half gallon- one gallon of water
2 gallons white grape juice
9 lbs honey
lalvin 116 yeast

the gravity wound up being Way too high at 1.15 and now its stuck / finished at 1.052

I want to make another 3 gallon batch that goes completely dry and blend them together to get something drinkable

how much honey would you all recommend for another 3 gallon batch so that it will go completely dry and not taste bad when I blend it?

maybe like 5 lbs? 3 lbs?
regardless of how much honey I use, if it goes totally dry the final gravity after blending will be the same correct? So mostly I'm worried about it not tasting watered down. should I use a little bit of the same grape juice or just go honey?
