Hey Everybody! I bottled my hydromel (yeah its a month old, but it's ready.). And... My honey subscription won't be delivered for 2 more weeks. I cant live in an apartment with an empty carboy for 2 weeks. No way... No how.

Marshmallow Blue's Turbo Juice
1 Gallon Apple juice
4 cups of brown sugar, not packed
2 brewers best cinnamon sticks
Fleishmans bread yeast

Starting Gravity 1.090

I brewed this yesterday, It's already vigorously fermenting, I'll air it up and give it nutrients when I get home today. This will be bottled in PET bottles and crashed upon arrival of my honey subscription in a couple weeks, clarity is not a concern.
Bottles will be primed with table sugar.
 
This is fermenting along. Here's some photos of the process.

Must be some kind of bottling / brewing day or something. If you cant handle the mead, stay outta the kitchen!

A few days later: This is before aeration. This fleishmans yeast loves apple juice and Brown sugar!

Funny to see this, I've got a similar set up at the moment:
3L cider (og 1.052)
400g demerera sugar
2 smashed cinnamon sticks
1 crushed nutmeg seed
~12 thompson raisins
EC-1118, rehydrated (1/4 package?)

OG: 1.103

Definitely interested to see how yours turns out!
 
I took a quick taste of this, now that the fermentation is done on this one. It's as expected, very hot and young. However, there's enough residual sweetness for it to be tolerable. I'm going to bottle condition this when my honey comes in the mail. It should be a nice bubbly cold beverage for some of the cooler spring days.
 
I did this exact same thing. The link is in my sig it's "Cal's Apple Something". I added cinnamon and clove to mine as it tasted weird at a gravity of 1.001.
