Congrats, guess there goes my theory hehe. Quick question or two, how much of your honey did you cook? How did you cook it? Glad it got worked out.
Initially I cooked all 7Kg in a large stainless pot from a white clover honey to a ruby red color. About 1.5 hours on a low simmer.

Then added another 3 kg cooked in the same way ag a layer date.

On the restart I got lazy and just started a traditional with 7Kg or raw clover honey and added the stalled batch incrementally over 4 days.
