Alright, so I've backsweetened with 8 oz. of honey just to see what it brings the reading up to. Now I'm wondering, is all that honey going to dissolve or will there be a film of it left in the bottle?
A gentle stir wouldn't hurt but it should eventually dissolve. If you stabilized first with the campden tablet and potassium sorbate, you should be fine, if you skipped that step, the yeast may eat all this additional honey so you may have to do it a couple of times before they leave any sugars for you
