Hello Everyone!

I’m three days into my first batch of mead and there’s no foaming on the top of my mead at all. I’m making a one gallon batch in a 2 gallon fermenting bucket. I used
- 1 gal of water
- 3 pounds of orange blossom honey
- 1 pack of lalvin d47 yeast
- 1 tsp of yeast nutrient for the last three days

I’ve done a lot of research and every picture I’ve seen shows a thick layer of foam on top. Mine doesn’t show any visible activity at all besides a bubble every 5 seconds or so in the airlock. I can smell a slight alcohol smell when I open the door to the closet I’m storing the mead in. The temp in the closet stays about 75 degrees Fahrenheit. Is there something else I should be doing or should I just leave it alone and see what happens?

Well, bubbles and foam are not a good way to know what's going on. You need a hydrometer. Bucket (especially 2G buckets) are notorious for leaking, so counting bubbles doesn't really work.

Is this the same batch you pitched the yeast into, after adding a Campden tablet and not waiting 24 hrs?

How did you pitch your yeast? Did you hydrate it?

What kind of nutrients are you using? If it has DAP in it, then you should not have added it until you saw active fermentation.

D47 is not a good yeast to be using, if you don;t have temperature control, as it likes to stay between 59F and 69F, and preferably on the low side.

Have you been doing daily stirring/aeration/degassing?
