Mead

Well I'll know if those first four are off or not once this new batch gets to a point where the primary fermentation is at a point where there is substantial alchohol. Right now the new batch smells much sweeter but it's only been at it for about 48 hrs...but it's bubbling pretty hard. But yeah since no one really makes this stuff it is a little difficult to know if you screwed up or not....

When I first started my mead, I was really concerned about the smell (they had a really sour aroma, as best I can describe it). They're done fermenting now, I'm just waiting for them to age to let the alcohol taste mellow out, but they seem to be fine as far as I can tell.

Possible explanation

For anyone still reading this thread I thiiiink the sour smell is so noticeable because of how little honey I used in these mixes...not 100% sure. I do have two more new batches going and used significantly more honey and the smell is there but balanced out by the sweet honey smell. It is a little hard to tell though because this new mead has honey from a different apiary.
