Can large batch meads be done in open style fermenters? Like with wines.

Maybe I should say, ARE large batch meads done in open fermenters?
 
Good question. I don't know. But I'd like to!

Seems like brewing in open vats would be risky. The process of making mead seems pretty... robust. However, I have to keep a constant eye on fruit flies here in Colorado. At least with an airlock they can't do gross things in my mead. :eek:
 
Hopefully, either B. Nektar or FoxHill will chime in on this. I do all my small (5 gallon) batches in open buckets (either loose foil or cheese cloth to cover) for primary and haven't had a problem yet. The local brewery has three 7 barrel open fermenters that they do their stuff in too (beer).
 
It's very simple to make a frame of PVC and attach a fine cloth screen that you can just lay on top of the fermenter which will keep all the bugs, debris and general flotsam riding the air currents around out of your fementaton vessel.
