plum pear melomel need to know when to rack

hey i hope this is not to stupid of a question but the more i read here the more i realize i dont know

plum pear melomel
16 lbs honey
juice from 6 lbs plums and 6 lbs pears
2 pacs lalvin 71b-1122
forma k as instucted
pecctic enymes as instructed

1.083 before adding 1 lbs of honey
made 2/19/06
been bubbling like crazy 2 days ago cut down to 1 every 6 secs
now no more bubbles

do i need to rack and get it off the lees
when ive used this yeast for wine it was normally racked 7-10 days later and it has been 11

dont know what to do please help

With 71B-1122 you can let it age for extended periods on the lees with no worries... I'd let your batch go at least one month before the first racking.

PS I have batch of plum melomel aging right now that I racked the secondary onto 10# of plums and left it for another 2 months (lees, plum pulp and all), gently stirring about 1x/week. Nice plum flavor at this time and brilliantly clear.
