How is this one coming along? I'm getting the itch here. Did you go with the pure pomegranate juice or a blend?

I had mentioned it to my father and he's quite eager to go out and buy stuff for it. I've been gifted a bunch of gallon jugs, and have a couple of extra airlocks, soooo.... <grin>

I don't know if I've got any 71b in my yeast cache, but I know I've got K1V. Its my go-to now.

I've been thinking about one of the pom blends, but I'm undecided.

Any/All info appreciated. Hope you're either hunkered down for this storm or out of its way!

Hey! sorry to get back to you so late. So this is what i did...

10/27 For a 1 gallon batch i used 2.5 lbs of honey and the rest straight POM juice to fill 1 gallon. didnt actually take a gravity but my calculations it should have been about 1.140. I let pectic enzyme sit in it over night and pitched 71B the next morning with 1/2 tsp of nutrients. day two aeration and 1/2 tsp of nutrient. day 3 more aeration and another 1/2 tsp of nutrients.

11/29 Racked

1/4 gravity 1.005, PH 3.99. The pom juice really has a bit to if which i think reflects the in the PH. slight alcohol taste which should age out fine i hope. Color is really unique a brownish/red color. like dried blood.

I am looking at keeping the SG lower and still make it an actual melomel/mead (>50% fermentables from honey)

So far, I figure that if I go with 1.4-ish pounds of honey and 2.75 liters of Pom juice (having to add about 3 1/3 cups of water to bring it up to 4 liters), the SG will be around 1.090 and if it finishes dry will end up around 12% ABV. Then I can backsweeten with pom juice and/or honey.

I wouldn't mind 14% ABV or higher, but I'm making this for someone who appreciates a little lower alcohol content.

By the way, since pomegranates are big in the middle east, and since the juice is hellishly expensive, I have decided to call it "Tears of the... Profit". <ducking>

Judging by the taste of your batch, do you think it would suffer from diluting it with water as I mentioned? I'd appreciate even a hunch.

I thought I would hi jack this thread as independently I started my own batch with POM Pomegranate juice from Costco.

My recipe:

5 gallons

16 lb Light Wildflower Honey
2.8 Liters POM
5 grams D47 Yeast, re-hydrated as suggested on package.
3 tsp Nutrients
Water to 5 gallons.

S.G. of combined ingredients was pushing 1.130. GotMead Calculator said it should be 1.121.

I want to stop it at semi-sweet so that the sweet will balance with the juice (hopefully).

where i live lots of pomegranate plants i can get actual and make fresh juice.
if it taste as it looks i gonna make ton of it :P :o

If and when I was to do this again I won't do 100% Pom juice and I'll tone the alcohol back a bit from 14 to ~12. Between the bitter of the Pom and the alcohol it just wasn't for me. That being said the two people that like Pom juice and got a bottle loved it. So my plans would be 50/50 water and Pom juice then in the secondary a couple pounds of blue berries for a few weeks.
