I've had a bottle of their Winter Solstice Metheglin sitting in my cabinet for a couple of years. When I first tried it a couple years back I found it to be disgustingly bitter hence why i hadn't hardly touched it in that time.

Poking in the booze cabinet I came across the bottle figured maybe it had gotten better with age, sho 'nuff! It still has a slightly bitter taste, but leans much more towards a pleasant honey nose and taste with a slight cinnamon afterbite.

When I first got it everyone agreed it was pretty awful, nowadays I'm betting it would get much better reviews. Just shows all mead gets better with age, even if only aging in a bottle!
 
A lot of the bitter compounds in some of my atrocities (like this one) have started to settle out physically, did you see any evidence of that? Or is it just the taste mellowing?

Yeah, I finished off the bottle the other day it had super fine sediment at the bottom. But part of it was certainly the taste mellowing. It actually had honey notes now where before it was just a bitter tasting mess.

I recently found this same mead at a Whole Foods store and tried a bottle of it that was produced December 2010 and although a tad sweet for my taste, otherwise loved the flavor of it so much that I have a 3 gallon batch with (almost) the same ingredients, fermenting now. Instead of the montrachet yeast I used D47 and instead of the honey(s) they used I'm using orange blossom and I'm letting mine finish dry. This was the first commercial mead I've ever had.

It's been fermenting longer than any other mead I've made so far (have about 10 gallons done so far of mostly melomels) and don't think it will be done for at least a couple more weeks. Can't wait til it's done!
