I just made my first batch yesterday (one gallon) and I'm making another Tuesday. I live in an apartment and have placed the gallon jug in a box in the corner of my kitchen which recieves no light from the outdoors. Will having my kitchen lights on affect fermentation as well ?

Fluorescents put out UV, which is what you're trying to avoid. So if you've got that kind of lighting, I'd cover it some more. Otherwise it should be ok under incandescent or LED light. Halogen, I'm not sure how much UV they produce but, if you have those, the information should be out there somewhere.

In theory even sunlight is ok as long as it is indirect (e.g. bounced off a wall), but I'm not about to test that one.
