Two weeks ago I started my first two gallon batch. My recipe consisted of 6 lbs. of Orange Blossom Honey, 1.6 gallons of distilled water, 1/2 cinnamon stick, 1 clove and a teaspoon of vanilla extract. My initial S.G. was 1.11 and I subsequently pitched 71B-1122 with half the recommended dose of just fermaid O. My air lock showed an activity of bubbles separated by 3-5 seconds.

On day #4 I aerated my must and added the second portion of the fermaid. Two weeks later, today, my airlock shows activity on an average of 9-10 seconds between bubbles. I took a S.G. reading and it equalled 1.060. I am striving for a medium mead with a S.G. of approximately 1.010. I've read in one source that the first rack should take place after 2 weeks; the newbee guide of this forum recommends waiting 'til time between bubbles reaches 30 seconds. When should I rack?
 
I usually wait till fermentation is complete before rackin, but I do know you can rack before fermentation is complete ( making a wine kit right now that asked me to rack at 1.04-.05) but is rather just rack once or twice rather than 2 or 3 or more times - lazy ahahahaha

Thanks for the responses. My temps range from 70-72. I used 1/2 teaspoon of fermaid O initially then another 1/2 teaspoon. I do not have a device to measure pH. I can get one if you believe that it will help.
 
Well your yeast are probably hungry, and your pH may be too low. I'd give it more Fermaid O. Using ½ tsp per gallon gives you about 35 ppm YAN. Things would probably work better with 100 ppm at minimum. I'd add 2 tsp of Fermaid O (dissolved in a little warm water). This will also work to shift your pH up.
