Heya there guys and girls. My first batch of JAO Is underway, and I am planning my second one now. I did the first by the book, but as I am not a huge fan of spices in beverages, I was wondering if making a JAOM without the spices would have a negative effect.
I know that the recipe is designed to be used as is, this my reluctance to omit the clover and cinnamon.
 
I don't know if omitting any of the ingredients completely would throw the balance off and ruin the batch, but I suppose you could try a small, 1 gal batch and maybe reduce the amount of the spices and see. One of these days I need to make another batch and modify it slightly to see what happens. For me, the only change I would make is using about .25 lb less honey/gallon.
 
Less honey makes sense, in order to get a less sweet mead, but given the bitterness of the orange pyth, I would be inclined to only use the zest. If I find that the first batch is sweeter than I like, then the next one will only get the zest and the flesh of the orange, and no spice at all.
 
Any deviation from Joe's recipe voids the warranty. ;)
The spices and the orange are balanced by the residual sugar.

That said, have fun with it and see what you like best.

Well, I have to wait till it's ready to be consumed before making a judgement. I do plan on making traditionals though, as that is what drew me to mead making.
