The beer turned out to be great. The PET bottles were rock hard after two weeks indicating completed re-carbonation. There was no sign/taste of oxidation from the re-bottling. The beer had a little more head than the previous batch. Most likely because there was some residual CO2 when I re-bottled. The one slight weakness of the first time I brewed a batch of this beer was head retention. I like the extra carbonation and will likely increase the priming sugar just a bit next time I make a new batch. This batch also has about an extra 0.5% ABV from the second priming sugar addition, but it does not seem to be any worse for it.
Since the PET bottles are bigger than the glass bottles, I now have to drink 24 ounces at a time instead of 12 ounces. What a sacrifice.
