Working on m first batch of mead. The way I understand it. You let wait till the fermentation process is done. Then wait for your mead to clear then rack it. then give it about another week and then bottle it. But what if you decide to make a sparkling mead? If you wait for fermentation to be complete. then the yeast is no longer active producing CO2. Thus no carbonation. If you rack and bottle early. before fermentation is done then you get the carbonation. But you risk exploding bottles. Unclear mead or sediment in the bottom of your bottles. Solution?
