So I have a 6 gallon batch of modified JAO its all done and cleared. I suppose I could bottle now but it will be a few more weeks before I get a large batch of bottles to put it in. I was wondering if I could siphon say 2 quarts into mason jars to hold me over? This is my first mead and I really want to give it a taste but of course I don't want to ruin it.

Just don't shake or aerate and you'll be fine. I have a friend who has a 6 g batch that she siphons off a bottle or two only for competitions. It's closing in on 5 years; she's finally given up on the idea of bottling it.

Nobody here has ever siphoned off a taste of mead. I would um... anger the mead frog. :confused5:
BTW--you might want to look into a CO2 system in the future, they are great for sampling and transfering meads with the minimal chance of oxidation. Northern brewer has them at a reasonable price

Private Preserve, which is available in many wine stores, and through online options as well, can be used. It contains a mixture of Argon, Nitrogen and CO2. If you are doing many batches, it can become expensive, and other systems may be more cost-effective. However, if you have one carboy that you are aging, it may be the easiest answer.
