When is it viable to take samples to measure gravity and to add nutrients? I've read through various threads that people do so. Doesn't opening the bucket or (in my case) removing the stopper/airlock to take a sample and/or add nutrients introduce more oxygen into the must and run the risk of contamination?

If you use good sanitary technique, the risk of contamination is minimal, and generally speaking, the air exposure during fermentation won't harm the mead.
