Joe I've made a couple batches your quick grape mead. Good stuff.

Two weeks ago, I decided to use apple juice instead of grape, and
make myself a nice cyser. I bought some "tree sweet" apple juice with ascorbic acid, and used your recipe. I racked it yesterday, and wow it is good already. Still needs to clear a tad, but it is very drinkable. Better than most store bought wines I might add. I wish I had taken an SG reading. Anyway I just wanted to say thanks. I hadn't brewed anything for several years, then I desided to get back to mead making, and found gotmead.com, and your recipe.

Thanks for your kind words. Feedback is always good. Happy I could be of help and that you could benefit by it. I'm glad to hear you are experimenting with variations. Thanks for the tip on the apple cyser. I used K1V on mine this year and stopped it sweet and it also was drinkable early. When you find sometime really good, feel free to share it with the rest of us. Looking forward to seeing more of your posts on your progress.
