Hi There! I am new to this forum and have been interested in making mead for some time. Have also dabbled in the homebrewing of mead with some pretty promising results. I have recently come into a large , long-term source of honey via a friend's brother who is a commercial beekeeper. We have crunched some numbers, but I am becoming a little perplexed with the taxes for mead, should I decide to make this an official business endeavour. My background is brewing, so I am looking to produce dry, light session meads with less than 7% abv. For ciders, I see this is acceptable and can be taxed at a much lower rate. Would the same apply for mead? Can we call it a wine cooler to TTB purposes? I understand the sparkling vs. still mead rates, but am hoping that being under 7% abv won't make me subject to the champagne/sparkling excise taxes. Does anyone here have any insights that could help? Any resources to direct me to, if not? Google hasn't been much of a help. Thanks!
 
Rumor has it that TTB is about to release regulations directed specificallly for mead...(hm....was it Chris W?). Things might be changing in a few months....

On one of the brewing network's podcast they said that any mead under 8% is regulated by the FDA. I have never search to see if that is true but it is a staring point.
