I have started a berry melomel(see brewlog) with orange blossom honey and RC212 yeast and plan to add berries in the secondary. However, I am thinking of racking off 1 gallon to make a small batch of traditional mead but I am unsure if RC212, which is a pinot noir yeast, might produce esters,etc. which may clash with the flavor the orange blossom honey. Has anyone tried this?
