I'm following a recipe for my first ever 5 gallon batch of mead that asks for 4 gallons of water and 20 pounds of honey. I was only able to fit 3.5 gallons of water in with all 20 pounds of honey. After some more research since starting this batch on August 29th, it seems like I've included way too much honey. I'm considering adding another half-gallon to a full gallon of water after primary fermentation is complete and just throwing out what I'm replacing with water. If this is indeed the best solution, how would I go about properly mixing the water into the must without aerating and spoiling it all?
I'm also going to be including 18oz strawberry preserves at this time and have basically the same question - how do I incorporate it into the must properly?
