What do you guys do to lower Acidity?

Either will work. The bicarb is easier to find because it's on the "GRASS" list. The carbonate is not because it is a little more exsplosive, especially when mixed with acids.You have to use more of the bicarb to do the same job. Cream of tartar can also be used and you can buy it at the grocery store.

Oh. Thank God. There's a list of things our government assures us are safe. And here I thought we were all on our own.
 
I've used bicarb at pitch to buffer and just bicarb because I was told it was safer to store/handle. Never tried it after it finish.
