What is granulated honey?

Granulated honey is crystallized honey in which some of the glucose content has spontaneously crystallized from solution.

Some honeys granulate faster than others, such as raw/unprocessed honey.

You can gently warm the honey in warm water to make it "uncrystallize."

While honey never goes "bad", it's quality does deteriorate over time. I have made mead with granulated honey, and it was OK. The bigger issue is probably the age of the honey. I have also made really damn good mead with crystallized honey--but it was only a few months old and was crystallized b/c it was raw, unprocessed, and contained bits of wax/propolis/bee legs/etc.

On Ebay I've gotten basswood honey from a seller called smittybee (or something with smittybee included) which was very good. It was also raw and crystallized very quickly.
