Hi and welcome. You should always feed your yeast nutrients. DAP is not something you want to feed them through the entire fermentation. It's like feeding them candy instead of a sound meal. I don't use it all all. Fermaid O is what I use instead. You can get it at morewine.com. Look up TOSNA to find a schedule, Lastly there is a wonderful podcast series on gotmeadlive. Look it up and start on 9/5/17

It is best to stagger DAP containing nutrients to prevent the yeast from over-eating early. Adding 50% at the beginning and 50% at the 1/3 fermentation point works in most cases.

By the way, the strict definition of a show mead means you don’t add nutrients; only honey, yeast and water. You are making a traditional mead.

Don't forget. Fermaid O is nothing more than yeast. People have boiled yeast to feed Show meads forever. I suppose it's a fine line to decide for one's self to follow the letter or, the spirit of the law. There really isn't a category in BJCP for a "show mead" and most don't see adding yeast as YAN a problem
